Types of Cold Room
1. Air Blast Chill Room: This type of cold room is for cooling down to wait for the next process or to control the bacteria or to let the enzyme react with the meat in the meat production process. Mostly, the Air Blast Chill Room will have time requirements. The typical operating temperature is about 2-10 Celsius degrees or depending on the products.
2. Freezer Room: This type of cold room is for cooling down and for storing the products in the long term at the temperature lower than the freezing point of such products. For example, the frozen fish can be stored at the temperature from -17.8 to -23.3 Celsius degrees and can be stored in the period of 8-10 months. The temperature is mostly required of around -5 to -25 Celsius degrees or depending on the products.
3. Cold Storage Room: This type of cold room is for storing the products which have been frozen. The products to be stored have the temperature lower than or equal to the temperature of the product storage room. In calculating the cooling, the thermal value from the products is not needed to calculate. The temperature is mostly required of around -25 Celsius degrees or depending on the products.
4. Air Blast Freezer Room: This type of cold room is for Freezing the products to become cool fast without destroying the cells. Freezing each type of products is different. For example, in Freezing fruits and vegetables, Freezing must be fast in order not to destroy the cell’s wall. That the cell is destroyed is because the water in the cells changes the status from liquid to fluid (ice crystals). In Freezing seafood, we must try not to cause the ice crystals inside the cells as the cells will be bruised. Generally, the Air Blast Freezer Room will have the capacity of 2.5 tons. The time needed for Freezing is around 4-5 hours. According to the requirements, the temperature can be maintained for not over 6 hours. The temperature is mostly required of around -35 Celsius degrees or depending on the products.
5. Anti Room: This type of cold room is for reducing the temperature of the air not to let the temperature flow to the Air Blast Freezer Room or the storage room with low temperature. This room is sometimes for storing the products or distributing the products. The temperature is mostly required of around -5 to 10 Celsius degrees or depending on the products.
